Culinary Historians of Canada Masterclass – Maize in Mexican Cuisine

Iván Wadgymar will lead the masterclass, beginning with the origins of maize in Mesoamerica.  Agricultural practices co-evolved with technologies like nixtamalization, which transforms the nutritional profile of corn, and creates the masa used in tortillas, tamales, and even the ubiquitous supermarket corn chips..

This masterclass will include a delicious tasting menu showcasing the versatility of maize in Mexican cuisine featuring corn, beans and herbs grown by Ivan.  This exclusive CHC event is offered in collaboration with The Depanneur.
